Mushroom Extract vs. powder: extraction and standardisation explained

Anyone looking to buy a mushroom extract for the first time quickly runs into two kinds of products that look almost identical on the label: extracts and ground powders. Same mushroom, same kind of packaging, often even similar photos. Yet you are buying two fundamentally different products. In this article we explain what extraction actually does, what an extraction ratio means, and why standardisation is the only number that really tells you what is in the jar.

What is ground mushroom powder?

Ground powder is the simplest form: the mushroom is dried and milled. What you buy is literally the whole dried mushroom in powder form. That sounds pure, and in a sense it is. But there is a practical problem.

The cell walls of mushrooms are made of chitin, the same sturdy material that insect shells are made of. The characteristic compounds of the mushroom, such as beta-glucans and polysaccharides, are largely locked in and behind those chitin walls. Our digestive system barely breaks chitin down. With a simple ground powder, a substantial part of the contents stays out of reach, however finely it is milled.

What does extraction do?

Extraction solves that problem with a classic method: hot water. In hot water extraction, the dried fruiting bodies are ground, checked for metal particles, and then steeped in hot water for an extended period. The heat and the water break the chitin structure open and dissolve the water-soluble compounds, including the polysaccharides and beta-glucans. The liquid is then centrifuged and spray-dried into a concentrated powder.

The result looks like ordinary powder, but the composition is fundamentally different: the cell wall barrier has already been broken down and the characteristic compounds are concentrated. This is not a modern invention, by the way. Traditional preparations in Asia and Northern Europe were almost always decoctions and teas: long steeping in hot water. Modern hot water extraction is at its core the same method, only controlled, measurable, and reproducible per batch.

What does an extraction ratio mean?

On extracts you will see ratios such as 8:1 or 12:1. That number tells you how many kilos of raw mushroom were needed for one kilo of finished extract. At a ratio of 10:1, ten kilos of dried mushroom go into one kilo of extract.

Two caveats belong with that. First: a higher ratio is not automatically better. The ratio says something about concentration, not about what exactly was concentrated. Second: ratios are indicative. Harvests differ per season and per growing location, so a serious producer states a range, such as 8:1 to 12:1, instead of an exact figure that offers false certainty.

That is why the ratio is at most the second number you look at. The first is standardisation.

Standardisation: the number that actually matters

A standardised extract guarantees a measured minimum content of characteristic compounds, independent of the natural variation between harvests. For mushroom extracts, two values matter:

  • Polysaccharides: a content of 30% or more is the accepted norm for a serious hot water extract.
  • Beta-glucans: the primary bioactive compound group in mushrooms. Beta-glucans are themselves a form of polysaccharide; a content of 20% or more is considered high.

The difference between those two values is more important than many labels suggest. And that is where the best-known trap in this market comes in.

The trap: polysaccharides from grain

Many products on the market are made from mycelium grown on grain, with the grain simply milled in. Rice and millet consist largely of starch, and starch is also a polysaccharide. A product that largely consists of grain can therefore show a perfectly fine polysaccharide figure on paper, while the characteristic mushroom compounds are largely missing. The U.S. FDA has even issued guidelines to prevent these “mycelium on grain” products from being marketed as mushrooms.

This is how you spot the difference on the label:

  1. Source material: does it say 100% fruiting body (or, for Cordyceps CS-4, pure mycelium from liquid culture without grain substrate)? Or does it just say “mycelium” without further explanation?
  2. Measured values: is the polysaccharide or beta-glucan content verified by an independent laboratory, or is there only a ratio?
  3. Independent verification: are the batches tested by an independent, accredited laboratory, and is the product traceable from harvest to finished product? A number without an independent test behind it is just a claim.

What does this mean in practice?

The practical difference between extract and powder is the amount you need. For a concentrated extract with a ratio of 8:1 to 12:1, the recommended daily intake is 1 gram, roughly half a teaspoon, or 2 capsules of 0.5 grams. To get anywhere near the same amount of characteristic compounds with unextracted powder, you would need a multiple of that, several tablespoons instead of half a teaspoon, and even then part of the compounds stays locked behind the chitin walls.
